No-Bake Peanut Butter & Oatmeal Power Bars

Yields: 12-16 bars
Ingredients:
2 cups Oatmeal (rolled or quick oats)
1 cup Peanut butter
1/2 cup Pancake syrup (or 1/4 cup Honey if you don't have enough syrup)
Optional: 1/4 cup Jelly (for a fruit layer)
Equipment:
Large mixing bowl
Small saucepan or microwave-safe bowl
8x8 inch baking dish
Parchment paper (if available, for easy removal)
Instructions:
Prepare Pan: Line an 8x8 inch baking dish with parchment paper, leaving an overhang on the sides for easy removal, or lightly grease the dish.
Melt Binding Ingredients: In a small saucepan over low heat, or in a microwave-safe bowl (microwave in 30-second intervals), combine the peanut butter and pancake syrup (or honey). Stir until completely melted and smooth.
Combine with Oats: Remove the peanut butter mixture from heat. In a large mixing bowl, add the oatmeal. Pour the melted peanut butter mixture over the oats.
Press into Dish:
For basic bars: Transfer the entire mixture into the prepared baking dish. Press it down very firmly and evenly with the back of a spoon or your hands (lightly dampen your hands if it's too sticky).
For jelly-filled bars (optional): Press about two-thirds of the oatmeal mixture firmly into the bottom of the dish. Spread the jelly evenly over this base layer. Then, crumble the remaining one-third of the oatmeal mixture over the jelly and gently press it down.
Chill: Place the baking dish in the refrigerator for at least 1 hour, or until the bars are firm enough to cut.
Cut & Serve: Once firm, use the parchment paper overhang to lift the slab out of the pan. Cut into 12-16 bars. Store in an airtight container at room temperature for up to a few days, or in the refrigerator for longer freshness.
